So my girlfriend and I are looking to travel abroad (we are from Denver, CO USA) and love forested trail day hiking. We love being in the trees. 

Of course we want to be a close drive to a city that has amazing food and other cool things to do: biking, water sports, etc.

Does anyone have any places to recommend where we can do beautiful day hikes but still have a city close by that has plenty to do as well.
